Grafted Napa Valley Cabernet Sauvignon 2017
Finally! A Cabernet Sauvignon that challenges the status quo for overly extracted Napa Valley reds that need time to age before being able to enjoy. While this expression will age 8-12 years comfortably, its absolutely ready to drink now with a silken texture and even more so, intense and defined aromatics that are truly undeniable- rich red fruits, mocha, dark chocolate... As our flagship offering, its truly difficult to have a better and more pure offering of the Napa Valley than this. There are Napa Valley Cabernet Sauvignons, and then there's Grafted. Composition: 92% Cabernet Sauvignon / 6% Merlot / 2% Malbec
Tasting Notes: Intense ruby in color, this Cabernet opens with a lovely bouquet of forward fruit, soft notes of oak from the barrel fermentation, some anise and a waft of mocha. Ripe black fruit unfolds on the palate offering cassis, blackberry and black cherry. The finish is long and lingering with a smooth rich texture.
Pairings: Filet or Ribeye of Beef, Veal Shank, or a pasta featuring an intense Italian pork ragu.
Winemaking: This wine undergoes the process of 'Flash Détente'- a process of pressing the grapes and using a combination of heating followed by immediately transferring to a cold tank in order to remove impurities via vacuum and intensifying the aromatics while also creating an intensely silky mouth-feel. 24% of the Cabernet Sauvignon was barrel-fermented then barrel-aged in new French Oak. The balance of the wine was fermented traditionally, in stainless steel tanks, then moved to neutral French oak for balance.
