Composition: 91% Cabernet Sauvignon / 5% Petit Verdot / 4% Malbec
Tasting Notes: Dense and diverse aromatically this wine opens black cherries, violet, and fresh strawberries. Followed by wet granite, dark cacao, sage brush and earth. Generous on the palate and the dark berry and stone fruit character is balanced by forest floor and beautiful oak finish. The structure is dense with classic gripping Red Mountain tannins, tension and a drawn-out acid and spice finish. This wine is designed for longevity in the cellar but can be enjoyed young with a lengthy decanting.
Pairings: Filet or Ribeye of Beef, Veal Shank, or a pasta Bolognese.
Winemaking: Vintner Bill Leigon sources these grapes from the Canyons Vineyard, All the fruit is run through a Pellenc destemmer and Optical sorter. This process removes all MOG (material other than grape) and leaves nothing but pristine berries. The wines are fermented in small batches to emphasize the unique character of each vineyard block. Once the true nature of the wine has been revealed we blend the wines using the uniqueness of the individual to create a harmonious whole.
