Despite Amadio's presence worldwide, this wine was specifically made in conjunction with VinoVida and is completely unique to the global market.  Be the firsts to try this wine in the world- and discover a surely coming cult classic! Founded in 1936, the Amadio family is in their third generation of winemaking prestige.  The estate vineyards are located at the southern border to Barossa Valley and the northern border of Adelaide Hills. This, in turn, provides an unmatched opportunity for hot days & cool nights; essential for developing acid in the grape. Highly awarded & acclaimed, Amadio works painstakingly to be as unobtrusive on their natural resources as possible- such as using rainwaters to fill their reservoirs for irrigation. Amadio even employs an army of close to 2000 sheep that roam the vineyards to assist with eating & clearing ground cover and providing natural fertilizers.

Composition:  64% Grenache  |  20% Shiraz  |  16% Merlot

Tasting Notes:  The merlot pulls the expected blueberry and chocolate covered coffee bean on the nose.  On the palate, the dark black cherry skins and rich blackberry give way to touches of smoke, bacon, red earth, and dried rose petals.  The wine is textured, yet medium bodied, with an acidity that complements food extremely well, but can stand alone just the same.

Pairings:  Smoked meats, fried chicken, stir fry, veal parmigiana, semi-soft white cheeses, Iberico ham or prosciutto, and roasted & charred broccolini

Winemaking:  The grapes are de-stemmed, leading to a softer blend on what would generally be bigger & bolder.  The grapes ferment 7-days on the skin, and the richness comes through in the mid-palate. During the fermentation, which took place in 2-tonne open top fermenters, the juice was splashed down on its own grapes twice, daily.  This helps keep everything wet and introduce oxygen to the fermentation, The wine is aged 18 months in a blend of both French and American oaks.
