Founded in 1936, the Amadio family is in their third generation of winemaking prestige.  The estate vineyards are located at the southern border to Barossa Valley and the northern border of Adelaide Hills. This, in turn, provides an unmatched opportunity for hot days & cool nights; essential for developing acid in the grape. Highly awarded & acclaimed, Amadio works painstakingly to be as unobtrusive on their natural resources as possible- such as using rainwaters to fill their reservoirs for irrigation. Amadio even employs an army of close to 2000 sheep that roam the vineyards to assist with eating & clearing ground cover and providing natural fertilizers.

Composition: 100% Shiraz [Syrah]

Tasting Notes:  This powerful Aussie Shiraz is a happy balance of full fruit flavors and supported by oak tannins.  The entry is surrounded by intense plum and ripe raspberries, swelling on the mid-palate with complementary berry fruits.  The finish is subtly bold; the spicy tannins give way to restrained aromatic notes of licorice & cedar.

Pairings: This wine is the perfect accompaniment to your barbeque whether its brisket, pork shoulder, Picanha, or game bird.  Roasted or grilled root vegetables like parsnips, carrots, rutabaga, and turnips with smoked meats and this delightful Shiraz will be absolutely divine.

Winemaking:  From harvesting in the vineyard, the grapes are de-stemmed and the whole berries are crushed very gently to encourage more berry flavor in the resultant wine.  The wine sees 20% use of old French barrel, while the rest is aged in tank on oak fans; altogether for 12 months.  The decision to de-stem adds more berry flavor to this Shiraz than performing punch-downs or pump-over which coax more of the savory nature of the grape through over extraction.
